It?s on August 20th, and it?s a good excuse to buy a big bag of lemons and make some delicious citrus-flavored food to share with your loved one!

Old-Fashioned Lemonade

1 ? cups sugar

? cup boiling water

2 teaspoons grated fresh lemon rind

1 ? cups fresh lemon juice

Lemon slice

  • Stir together sugar and ? cup boiling water until sugar dissolves
  • Stir in lemon rind, lemon juice and 5 cups cold water
  • Pour into a 2 quart pitcher
  • Chill for 8 hours
  • Garnish with lemon slices
  • Serve over ice. (even better, make 2 batches of lemonade and freeze one batch in ice cube trays. Then, serve the lemonade over lemonade ice so that the ice cubes don?t dilute the fabulous taste of the fresh lemonade!)

Lemonade Muffins

1 ? cups flour

? cup sugar

2 ? teaspoons baking powder

? teaspoon salt

1 beaten egg

1 (6 ounce) can of frozen lemonade, thawed

? cup milk

1/3 cup cooking oil

? cup chopped walnuts

  • Mix dry ingredients in a bowl.
  • In another bowl, mix only ? cup lemonade, egg, milk and oil.
  • Add to dry mix, stirring until just moistened.
  • Gently stir in nuts.
  • Spoon into prepared pans and bake at 375F.
  • Bake for 15-20 minutes or until it tests done (toothpick comes out clean.)
  • While hot, brush the muffin tops with remaining lemonade and sprinkle with white sugar.
  • Makes 8-9 large muffins.

These muffins freeze well. Wrap leftovers when cooled completely. Each muffin can be wrapped in plastic wrap and then all muffins placed in a freezer bag. Makes a quick snack!
